This cookbook is a collection of my best 88 recipes. They are mostly lacto-ovo vegetarian with a smattering of recipes for my vegan friends. Vegan recipes are designated with a green “vegan” icon in both the Table of Contents and in the indexes.
In the Appetizers section, you will find delights such as Beer-Battered Avocados, Fresh Tzatziki Dip, and Portobello Wellingtons. There are a dozen soups, including Irish Cheddar Cheese and Broccoli Soup, Matzo Ball Soup, and Robin’s Tortilla Soup.
There are enough salads to keep you eating fresh in all four seasons. They include Healthy Roasted Potato Salad, Multicolored Tortellini Salad, and my favorite, Caprese Salad with Chipotle-Honey Vinaigrette.
Main course recipes include Meaty Nutloaf, Lasagna Rollups, North African Tagine, and Risotto with Chanterelle Mushrooms. Desserts include Carrot Cake with Butter Cream Frosting, Chocolate Espresso Cookies, and Fresh Apple Tart. I’ve also included ten sandwich recipes and eight sauces and/or dressing recipes.
